October Recipe: Waldorf Chicken Salad

Now that it’s dark at 6PM, I’ve been big on quick and easy recipes that you can prepare ahead of time to grab and go when we’re on the run. This chicken salad recipe is the bomb, and inspired by the recipe featured at the Waldorf Astoria in NYC! I love this chicken salad in tortilla wraps, but any type of bread or lettuce wrap will do.

Here’s what you need:

1 Rotisserie Chicken

1 stalk Celery, Thinly Sliced

1 whole Apple, Chopped

3/4 c. Halved Grapes

3/4 c. (or More) Roughly Chopped Walnuts

3/4 c. Mayonnaise

Salt And Pepper, to taste

1/4 Lemon, Juiced

Directions:

Grab a rotisserie chicken, pull and chop the breast meat, then thinly chop your celery, roughly chop your walnuts, dice the grapes & chop up the apple.

Add Mayo to your liking along with salt + pepper and a squeeze of lemon. Mix together and enjoy! Hopefully this recipe makes your work week a little easier.
